Patrick Fore

CEO

Experienced leader, mentor, and strategist, guiding LIME to new growth and success.

Patrick Fore is a seasoned hospitality professional with over 20+ years of experience, currently serving as CEO of LIME Fresh Mexican Grill and leads the brand’s strategic vision, growth initiatives, operational transformation and the brand’s reintroduction and franchising. With deep roots in the restaurant and franchising space, Patrick brings a hands-on, growth-oriented mindset to evolving Lime Fresh as a fast-casual leader with a fresh, Miami-inspired identity.

Previously, he held key roles at EverFresh Endeavors and founded ForeWith Strategic Growth, specializing in strategic acquisition and infrastructure development. He also served as Co-Founder and CEO of Fleat StreetLogic®, pioneering intelligent mobile retail solutions for last-mile delivery. Earlier, Patrick guided Tijuana Flats from five to more than 130 units as Vice President of Real Estate, Construction, and Development.

At the heart of Patrick’s approach is a deep respect for the brand’s origins. He often recounts his own journey—from working as a dishwasher to helping grow Tijuana Flats from 6 to over 130 units—to illustrate how passion and operational rigor can scale. Since joining Lime Fresh, he has overseen significant store renovations, menu unification, and the rollout of new elements like a bar-forward layout and Miami-inspired cocktails. 

His strategic leadership is also evident in menu innovation: under his direction, Lime Fresh expanded beyond traditional fare to introduce items such as limited-time pizza offerings, aligning with the brand’s “no freezers, no microwaves” promise. 

Patrick is driven by mentorship, brand authenticity, and disciplined growth. He emphasizes investing in infrastructure and people as the company enters a new chapter in growth scaling thoughtfully while protecting the vibrant, fresh, community-rooted identity that distinguishes Lime Fresh. 

Lee Babcock

CFO

Experienced executive leading LIME’s financial growth and success.

Lee Babcock serves at the CFO for Mandala Holdings as well as for EverFresh Endeavors where he leads the company’s financial strategy, real estate development, and long-term growth planning. With a strong background in finance, hospitality, and commercial real estate, Lee brings over two decades of experience to the leadership team.

As CFO, Lee oversees financial planning and analysis, capital management, and real estate strategy for Lime Fresh’s expanding footprint. He plays a key role in identifying high-potential locations, structuring leases and investments, and aligning financial operations with the brand’s mission of delivering fresh, high-quality Mexican cuisine in a fast-casual setting.

Before joining Lime Fresh, Lee held senior roles at Gaylord Entertainment and RLJ Development, where he managed complex hospitality and mixed-use development projects across the U.S. His career spans institutional real estate, private equity, and restaurant finance—giving him a deep understanding of both operational execution and long-term value creation.

Lee holds an MBA from the University of Chicago Booth School of Business, with concentrations in analytical finance and accounting, and a Bachelor of Arts from the University of Virginia. He also served as an infantry officer in the Army National Guard and was deployed during Operation Enduring Freedom.

Lee is passionate about building scalable financial systems, supporting data-driven decision-making, and ensuring the fiscal health of LIME Fresh as it continues to grow.

Ethan Albrecht-Carrié

VP of Growth & Franchise Development

Passionate hospitality leader focused on brand and franchisee success.
 

Ethan Albrecht-Carrié is a seasoned Hospitality Professional with over 20+ years of experience in the Restaurant/Food Service industry.  At LIME Fresh he leads the brand’s expansion strategy and Franchise Sales efforts. With a sharp focus on scalable growth and a passion for cultivating strong franchise relationships, Ethan plays a pivotal role in bringing LIME’s fresh, high-quality, fast-casual concept to new communities through traditional and non-traditional locations.

Before joining Lime Fresh, he held key leadership roles across the hospitality and restaurant sectors, including Four Seasons and STARR Restaurants where he consistently delivered strong results in hospitality excellence and brand positioning. His strategic mindset and relationship-driven mentality have set the tone for LIME’s hospitality first approach to growth and expansion.

At Lime Fresh, Ethan is responsible for identifying and nurturing franchise partnerships, optimizing new market entries, and ensuring that each new location upholds the brand’s commitment to freshness, community, and vibrant flavor. Under his leadership, Lime has accelerated its franchise pipeline while maintaining its strong cultural identity and hospitality-first ethos.

With both a Hospitality Degree from Cornell University (BS ’04) and Sommelier Certification (WSET Level III), Ethan has helped drive LIME’s innovation and evolution for best-in-class design, menu, and beverage offerings.

Jonathan Pavano

Brand Director of Operations

Operations leader and mentor focused on success through efficiency, execution, and culture.

Jon leads the strategic execution of operations, franchise support, and brand growth initiatives across all markets for Lime Fresh Mexican Grill. With a career spanning 20+ years in restaurant and food-service leadership, Jonathan brings a strong operational acumen and a passion for creating high-performing teams and scalable systems that drive consistent guest and associate experiences.

At LIME Fresh, Jon plays a key role in positioning the brand for its next phase of expansion, helping to modernize operational frameworks while preserving the authentic, neighborhood-focused energy that defines the LIME experience. With over 20 years leading highly successful high-volume concepts, Jon now brings his experience and expertise to leading our operations programs, driving innovation, and overseeing our procurement and supply chains.

Jon’s collaborative leadership style and deep understanding of both franchisor and operator perspectives allow him to serve as a trusted partner to franchisees, ensuring alignment between brand vision and day-to-day execution.  He is passionate about hospitality, brand storytelling, and bringing people together over fresh, flavorful food, and memorable experiences.

Morgan Beene

Director of Marketing & Social Impact

Experienced marketing professional and operator focused on results-based strategies that drive measurable growth, creativity, and community impact.

Morgan Beene serves as the Director of Marketing & Social Impact for LIME Fresh Mexican Grill, where she leads the creative strategy, brand storytelling, and guest engagement initiatives that bring the vibrant, Miami-inspired ethos of the restaurant to life.

With a background as a pastry chef for over a decade and a creative director in production, Morgan blends artistry, design, and data-driven marketing to create experiences that are beautiful, and fun. Her work connects flavor and feeling translating LIME’s bold visuals, fresh food, and lively culture into campaigns that resonate both online and in-store.

With a strong passion for operations, culture, design, and digital innovation, Morgan oversees campaigns across traditional advertising, social media, digital content, and experiential touchpoints. In her role, she ensures that every interaction from in-restaurant ambiance and packaging to digital voice and social presence reflects LIME Fresh’s commitment to “fresh, bold, made-from-scratch food” and the energetic, welcoming spirit that defines the brand. She works closely with culinary, operations, and franchise teams to translate new menu launches, store redesigns, and guest-experience enhancements into compelling, cohesive stories that delight existing guests and attract new ones.

In her dual role, Morgan also leads LIME’s social impact initiatives, shaping programs that give back to the communities the brand serves from supporting local children’s hospitals to feeding teachers, veterans, and families in need. She also oversees partnerships with local sports teams across South Florida and Orlando, building community connections that reflect LIME’s hospitality-driven mission.

Grounded in The Mandala Way, Morgan believes in conscious capitalism. Using creativity and compassion to make hospitality not just a business, but a movement that nourishes people, places, and purpose.

Sharon Fernandez

Operations Support Manager

Relationship focused hospitality leader driving success through passion and consistency.

Sharon Fernandez plays a critical role in ensuring operational excellence across the brand’s restaurants. In this position, Sharon provides guidance and support to restaurant leadership, facilitating process improvements, consistency, and efficiency in daily operations.

Her responsibilities include standardizing operating procedures, training and coaching management teams, overseeing quality assurance, and helping implement new systems and best practices to enhance guest experience, food safety, and service speed. Sharon works closely with operations and training departments to ensure that each location aligns with LIME Fresh’s high standards for guest satisfaction and brand consistency. 

With over 14 years with LIME Fresh, a degree in hospitality from Johnson & Wales, and her family’s restaurant background, she is known for her strong attention to detail mentorship, and passion for both food and hospitality.  Sharon is a champion of continuous learning and uses data and feedback to drive incremental improvements and maintain a culture of excellence.

Vinay Rama

Chairman & Owner

Passionate innovator and experienced hospitality executive focused on driving success through innovation and hospitality heart.

Vinay Rama is Chairman and Owner of Lime Fresh Mexican Grill through his hospitality investment platform, Mandala Holdings. A lifelong hotelier turned restaurateur, Vinay brings deep operational, investment, and real estate expertise to the growth of the LIME Fresh brand. 

Vinay’s journey began in the hospitality industry at a young age. He grew up working in his family’s motel business, doing tasks from bed-making to facility upkeep, which instilled in him an early appreciation for service, attention to detail, and the guest experience. He later pursued formal education in hotel management and real estate finance at Cornell University (BS ’04)

Vinay seized an opportunity in 2018 to acquire the LIME Fresh brand and apply his year of experience in hotel operations, sales, marketing, and investment to breathe new life into the brand.  Under his ownership, the brand has been revitalized—refreshing store design, evolving the menu, introducing new beverage components, and driving innovation and hospitality.

Vinay describes the Lime Fresh concept as more than just a restaurant—it’s an experience, built on fresh ingredients, on-site preparation (no freezers or microwaves), and a vibrant, Miami-infused DNA. He emphasizes that growth must be disciplined, ensuring the brand’s core identity and culture are preserved even as the company expands. 

Looking ahead, Vinay is focused on national expansion through a revamped franchise model, enhancing guest and associate experiences, and maintaining the authentic, bold identity that sets LIME Fresh apart, defining the “elevated fast casual” space.  There is also a strong appetite for international growth, and feels it will come to fruition organically given growing global interest in Mexican cuisine.
